Recipes for Those of You Who Love Cream Cheese Icing

The above recipe is delicious and bursting with flavor.  Still, there are those of us who would like to add at least a little bit of cream cheese icing, regular or dairy-free.

 

Regular Reduced Fat Cream Cheese Icing

What You Need:

  • 4 oz of reduced fat cream cheese
  • 2 tablespoons of reduced calorie margarine
  • 2 tablespoons of granulated sugar
  • 1/2 teaspoon of vanilla extract

Directions:

Blend ingredients together and decorate the carrot cake muffins.

Nutritional Information (1/12 of the recipe): Calories 71, Carbohydrate 6 grams, Protein 2 grams, Fiber 0 grams, Fat 5 grams. Diabetes exchanges: 1/2 Carbohydrate and 1 Fat.

Dairy-free Cream Cheese Icing Alternative:

For those of you requiring a dairy-free or vegan alternative, and those of you wanting a carrot cake and cream cheese icing too, there is of course the wonderful opportunity to replace regular reduced cream cheese with tofutti cream cheese and use vegan margarine.

Make the above substitutions; follow this recipe and voila!  Nutritional information (1/12 of the recipe): Calories 108, Carbohydrate 20 grams, Protein 1 gram, Fiber 0 grams, Fat 7 grams. Diabetes exchanges: ¾ Carbohydrate 1 ½ Fat

Further Suggestions for enjoying iced muffins: 
• A suggestions for our friends with diabetes: Replace up to ½ of the sugar with an equal portion of sucralose. This will lower the calories and carbohydrates. The amount will depend on how much sucralose is used.
• Use your favorite low fat pre-prepared cream cheese icing to save a sliver of time.
